Vegan Lemon Feta
Firm tofu in a lemony koji marinade with olive oil, garlic and herbs. Crumble over salads or tuck into sandwiches.
Ingredients
- 200 g Firm Tofu (recommended the one from Healthy Pulse), drain well and cubed (~1cm)
- 20 g Olive Oil
- 20 g Lemon Shio Koji (1.5 tablespoons)
- 1 teaspoon Thyme or other Italian Fresh Herbs (if you are using dried herbs, use 1/4 teaspoon instead)
- Cracked Black Pepper (optional), to taste
- 1 little clove Garlic, grated or minced
Preparation
- Cut the firm tofu into cubes as instructed and place them in a medium-sized bowl.
- In a separate bowl, prepare the marinade by combining the olive oil, Lemon Shio Koji, thyme or other herbs, black pepper, and grated garlic.
- Pour the marinade over the cubed tofu, ensuring that all the tofu pieces are evenly coated with the marinade.
- Transfer the tofu and marinade into a air-tight container (glass is recommended) or in a zip-bag.
Cooking
- Marinate the tofu in the refrigerator for 12 hours or at least overnight to allow the flavours to infuse into the tofu.
